ﺗﻮﺟﺪ ﺍﻟﻔﻴﺘﺎﻣﻴﻨﺎﺕ ﺑﻨﺴﺐ ﺻﻐﻴﺮﺓ ﻓﻰ ﻣﻮﺍﺩ ﺍﻟﻌﻠﻒ ﺍﻟﺨﺎﻡ ﺃﻭ ﺍﻟﻄﺒﻴﻌﻴﺔ ﻭﻫﻰ ﺗﻌﺘﺒﺮ ﺿﺮﻭﺭﻳﺔ ﻟﻌﻤﻠﻴﺎﺕ ﺍﻟﺘﻤﺜﻴﻞ ﺍﻟﻐﺬﺍﺋﻰ ﻭﻳﺴﺒﺐ ﻋﺪﻡ ﺗﻮﻓﺮ ﺍﻟﻔﻴﺘﺎﻣﻴﻨﺎﺕ ﺑﺎﻟﻤﺴﺘﻮﻳﺎﺕ ﺍﻟﻤﻘﺮﺭﺓ ﻓﻰ ﻋﻼﺋﻖ ﺍﻟﺪﻭﺍﺟﻦ ﻗﻠﺔ ﻓﻰ ﺍﻹﻧﺘﺎﺝ ﻭﺃﻋﺮﺍﺿﺎ ﻣﺮﺿﻴﺔ ﺑﻬﺎ ، ﻭﺗﺤﺘﺎﺝ ﺍﻟﺪﻭﺍﺟﻦ ﺇﻟﻰ ﺍﻟﻔﻴﺘﺎﻣﻴﻨﺎﺕ ﻓﻰ ﻋﻼﺋﻘﻬﺎ ﻷﻧﻬﺎ ﻻﺗﺴﺘﻄﻴﻊ ﺃﻥ ﺗﺨﻠﻘﻬﺎ ﻓﻰ ﺃﺟﺴﺎﻣﻬﺎ. ﻭﺗﻘﺴﻢ ﺍﻟﻔﻴﺘﺎﻣﻴﻨﺎﺕ ﺇﻟﻰ: - 1ﺍﻟﻔﻴﺘﺎﻣﻴﻨﺎﺕ ﺍﻟﺬﺍﺋﺒﺔ ﻓﻰ ﺍﻟﺪﻫﻮﻥ )ﺃ-ﺩ-ﻫـ-ﻙ. ( 3 - 2ﺍﻟﻔﻴﺘﺎﻣﻴﻨﺎﺕ ﺍﻟﺬﺍﺋﺒﺔ ﻓﻰ ﺍﻟﻤﺎﺀ ﻣﺠﻤﻮﻋﺔ ﻓﻴﺘﺎﻣﻴﻦ ﺏ-ﻓﻴﺘﺎﻣﻴﻦ ﺝ )ﺣﻤﺾ ﺍﻹﺳﻜﻮﺭﺑﻴﻚ(ﻭﻳﺨﻠﻖ ﻓﻴﺘﺎﻣﻴﻦ ﺝ ﺑﻮﺍﺳﻄﺔ ﺍﻟﺪﻭﺍﺟﻦ ﻭﻃﺒﻘﺎ ﻟﺬﻟﻚ ﻻﻳﻌﺘﺒﺮ ﻋﻨﺼﺮ ﻏﺬﺍﺋﻰ ﻣﻄﻠﻮﺏ ﻭﻟﻜﻦ ﻫﻨﺎﻙ ﺑﻌﺾ ﺍﻟﺒﺤﻮﺙ ﺗﺆﻳﺪ ﺇﺿﺎﻓﺔ ﻓﻴﺘﺎﻣﻴﻦ ﺝ ﻟﻠﺪﻭﺍﺟﻦ ﺗﺤﺖ ﻇﺮﻭﻑ ﺍﻹﺟﻬﺎﺩ ﺍﻟﺤﺮﺍﺭﻯ ، ﻭﺗﻘﺪﺭ ﺍﻹﺣﺘﻴﺎﺟﺎﺕ ﻟﻤﻌﻈﻢ ﺍﻟﻔﻴﺘﺎﻣﻴﻨﺎﺕ ﺑﺎﻟﻤﻠﻠﻴﺠﺮﺍﻡ/ ﻛﻴﻠﻮ ﺟﺮﺍﻡ ﻋﻠﻒ ٌﺑﺈﺳﺘﺜﻨﺎﺀ ﻓﻴﺘﺎﻣﻴﻦ ﺃ ، ﺩ3، ﻫـ ﺍﻟﺘﻰ ﺗﻘﺪﺭ ﺑﺎﻟﻮﺣﺪﺍﺕ ﺍﻟﺪﻭﻟﻴﺔ International Unit (IU).
