Fisheries sector plays an important role in the Indian economy. It contributes to the national income, exports, food and nutritional security and is a viable employment generation activity. Food basket of millions of people around the world is dependent on the protein and other nutritional requirements. The dietary habit all over the world and to the consumer preferences for fishery products could bring considerable structural changes in the sea food processing & export industry. The book provides an up-to-date and comprehensive account of nutritional aspects fish in human health, fish handling practices, fish curing, fish freezing, fish canning, fishery product development, HACCP concepts, quality assurance of fishery products.
